Quick Salsa

Ok if you like salsa this one is great. It works with chips, over eggs, on chicken, burgers. It is low fat, low carb and is extremely simple to make.

Ingredients:
4 Roma tomatoes or 6 Calipari tomatoes (costco fav)
1/2 sweet onion
1 tbsp minced garlic
1/4 cup fresh cilantro

Mince tomatoes into 1/4" chunks
Mince the onions
Chop the cilantro somewhat fine

Mix all ingredients together, cover, let set in the refrigerator for two hours. Eat!!

Hint: If the tomatoes are watery, drain them off into the sink before mixing the ingredients together.

This recipe took me 10 minutes to make last night.

  1. If you added a little jalapeno, it would be the pico de gallo I make to top most of my food. Sounds good!

  2. I will definitely try that. I also like a touch of habernero, although only a few small slivers make the salsa very hot.

    Habernero is very small doses tends to give salsa a great "afterburn" without ruining it.
