Ok if you like salsa this one is great. It works with chips, over eggs, on chicken, burgers. It is low fat, low carb and is extremely simple to make.
Ingredients:
4 Roma tomatoes or 6 Calipari tomatoes (costco fav)
1/2 sweet onion
1 tbsp minced garlic
1/4 cup fresh cilantro
Mince tomatoes into 1/4" chunks
Mince the onions
Chop the cilantro somewhat fine
Mix all ingredients together, cover, let set in the refrigerator for two hours. Eat!!
Hint: If the tomatoes are watery, drain them off into the sink before mixing the ingredients together.
This recipe took me 10 minutes to make last night.
If you added a little jalapeno, it would be the pico de gallo I make to top most of my food. Sounds good!
ReplyDeleteI will definitely try that. I also like a touch of habernero, although only a few small slivers make the salsa very hot.
ReplyDeleteHabernero is very small doses tends to give salsa a great "afterburn" without ruining it.
